The Bikini Cocktail
Yields 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Put all the ingredients inside a pot, heat until it reaches a light boil, mixing until the sugar dissolves. After that, remove from the stove and leave to reach room temperature completely. Transfer into an sterilised bottle, cap it keeping it chilled, it can be stored for up to one month.
To make Cocktail Base: Combine all the spirits and syrup in a big jug, allow it to infuse for one hour, then pass it through preferably using muslin, making it perfectly clear.
When ready to serve: Add 85ml of the batch mix into a stirring glass filled with ice, gently stirring carefully for about 60 seconds to chill. Pour to a cold coupe glass or a similar vessel, decorate with a few cranberries and finish by giving it a quick spritz of the essential oil above the glass.
